On long haul flights I’ve not had many problems with the main ‘meals’, but I have been left out of the snacks that get handed out.
On a flight to Stockholm last year they had a meagre amount of Veggie meals that ran out and when I asked the steward about Gluten Free meals he said he’d go and check – but I never saw him again!? That was a BA flight and online you couldn’t state dietary requirements on the meal.
So true – I’ve been served a small bowl of grapes as a “meal” on a long haul. And they looked so incredulous when I complained!
I recently flew with Thomas Cook and was amazed with my ediable GF meal. well impressed.
Also stayed at Sandos san blas hotel in tenerife, they were switched on to and it was premium drink which is a bonus for all inclusive

I’ve never been on a flight that offered gluten free anything.
